Do you love Snickers? Want to take your love for this delicious treat to a whole new level? Yesterday I experimented with a Snickers Cupcake recipe and ooooohh yum!

First let me start by saying, if you do not like sweets this recipe is not for you. This is sweetness overload right here.

These would be perfect for a girls night in or a bake sale! You can tweak the recipe as needed, if you don’t like overly sweet you can use another frosting recipe or eliminate the snickers inside the frosting.

 

Snickers Cupcake Recipe

Serves 12

Cook time 30 minutes

Ingredients

  • 1 box Cupcake Mix (Use a box or your favorite White Cupcake recipe)
  • 14 Fun Size Snickers Bar (The fun sizes are about 2 inches long)
  • 2 cups Butter
  • 1 tablespoon Butter
  • 2.5 cups Powdered Sugar
  • 1/4 cup Milk
  • 1 teaspoon Vanilla

Directions

Step 1
Create your favorite white cake mix
Step 2
Chop up the Snickers bars and place in a bowl on the side.
Step 3
Fill cupcake liners approx 3/4 full.
Step 4
Add a couple pieces of the snickers to the middle of each cupcake
Step 5
Bake according to the directions
Step 6
Let the cupcakes cool
Step 7
For the Frosting: Mix butter, milk and powdered sugar on low until well blended, add vanilla.
Step 8
Take 1/4 cup of chopped snickers and place in a bowl with 1 tablespoon of butter. Heat in microwave for approx 25 seconds.
Step 9
Pour the melted snickers mix into the frosting mix.
Step 10
Frost the cupcakes! (here's a tip, if you pipe the cupcakes you will need a tip large enough to pass the peanuts)
Step 11
Garnish with remainder of chopped snickers bars.

I was thrilled to find the Torani Almond Roca Syrup at Smart and Final (a large bottle for $4.99 was a steal). I decided to combine the syrup and candies to make an Almond Roca Fudge recipe!

Almond Roca Fudge Recipe

Serves 12-24
Prep time 2 minutes
Cook time 10 minutes
Total time 12 minutes

This Almond Roca Fudge recipe is easy and perfect or any time!

Ingredients

  • 12oz Semi Sweet Chocolate Chips
  • 14oz Sweetened Condensed Milk
  • 1/3 cup Torani Almond Roca Syrup (I found this at Smart & Final)
  • 1/2 cup Almond Roca Candies (Crushed or cut in food processor)

Directions

Step 1
Melt the chocolate chips on medium heat on stove top, stirring constantly and being careful not to scorch.
Step 2
Once the chocolate is melted, pour the condensed milk in and stir until well blended.
Step 3
Pour the syrup in, blend well.
Step 4
Stir in 1/2 cup of the crushed candy, blend well.
Step 5
Pour in a lined 8X8 pan, sprinkle the top with the 2 tablespoons of Almond Roca candy
Step 6
*Tip ~ Tap the pan on the counter to level out the fudge.
Step 7
Refrigerate until it's set, enjoy!

 

Peppermint Oreo Truffles Recipe via @CleverPirate

Call these want you want! Candy Cane Truffles, Peppermint Oreo Truffles or just call them HEAVEN!

I usually tend to gravitate towards the holiday Oreos, what can I say I am a sucker for that goodness but I found a healthier goodness!

Candy Cane Joe Joe’s! While I didn’t use the traditional Oreo, this recipe can be made with ANY sandwich type of cookie!

I hadn’t started making truffles till last year and while I am no expert, it is now one of my favorite “easy” holiday recipes! I created this Peppermint Oreo Truffle Recipe first as a mock up (because all the good bakers test their recipes first) but I wouldn’t change a thing, it’s fabulous!

These Candy Cane / Peppermint Truffles are easy to create and addicting! They make a great gift during the holidays.

Ingredients

  • 2 Sleeves Candy Cane Cookies from Trader Joes (Or Peppermint Oreos )
  • 4 oz. cream cheese (softened)
  • 1 bag Semi Sweet Chocolate Chips

Directions

Step 1
Line a cookie sheet with parchment paper or wax paper
Step 2
Process the cookies in a food processor until nice and crumbly, don't over puree them.

In a large bowl, combine cookie crumbs with the cream cheese. Come on, don't be afraid to use your hands!
Step 4
Shape them into little balls, approx 1 inch big.
Step 5
Lay them on the cookie sheet and freeze for approx 30 minutes to an hour.

Melt the chocolate carefully in a microwave, once melted (stir the chocolate well), carefully dip the truffles in the chocolate using two forks to toggle the truffle back and forth until it's coated.

Garnish with crushed candy canes, peppermints or the candy cane sandwhich cookies.

Allow to dry on the cookie sheet, enjoy!

Peppermint M&M Sugar Cookies w/ Peppermint Sugar via @CleverPirate

I’m in full holiday baking mode, from fudge to cookies, nothing is off limits! I recently tried a new product called C&H Light Sugar and Stevia Blend and before gifting anything I always try it out for myself (of course). I use Stevia at home and honestly created my own blend before with regular granulated sugar so this is kinda nice to have!

I came up with these easy Peppermint Sugar Cookies using this new sugar. At first I thought that I was going to struggle with coming up with a balanced recipe but I quickly found on the back of the bag that 1/2 cup of C&H Light replaces 1 cup of sugar! I researched high and low for different cookie recipes and then came up with one that we be perfect for what I wanted to do.

First thing I did was create Peppermint Sugar. This is extremely easy, I took 3/4 cup of the C&H Light and added 1 teaspoon of Peppermint Extract and stirred until it was well blended. This is great not only for baking but you can make Peppermint Sugar to keep in a jar for your coffee or even add it to milk!

This Peppermint M&M Sugar Cookie Recipe is easy to create and the Peppermint Sugar gives it added flavor perfect for Christmas!

Ingredients

  • 3/4 cups C&H Light Sugar
  • 1/2 cup Butter (Softened)
  • 1/2 cup Margerine (Softened )
  • 1 teaspoon Vanilla
  • 2 Eggs
  • 2 & 2/3 cups Flour
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1 cup Peppermint M&M's

Directions

Step 1
Preheat oven to 375 Degrees. Cream together sugar, vanilla, eggs, butter and margarine until well whipped together.
Step 2
Slowly add dry ingredients until well blended.
Step 3
Scoop into 1-2 inch balls, press M&M's in the middle.
Step 4
Bake approx 10 minutes or until edges are golden brown.

I will say these baked really well, they came out soft and fluffy and I would definitely use the C&H Light Sugar again. My only note is if you aren’t used to the Stevia taste, it may have an aftertaste you are not used to.

Fall is here and I can not wait to start baking, so I started this week! I wanted to start baking season with cupcakes to celebrate the kids great report cards. Also, I wanted to fix my Fall cravings. A few weeks ago in Walmart I saw the new Cool Whip Frosting and I was definitely intrigued. I usually make my own frosting however, when I’m in a pinch I’ll use canned frosting so I thought a frozen frosting may bring a fresh taste to my cupcakes!

I wanted to make a spiced cupcake and I decided to purchase the chocolate Cool Whip Frosting to go along with my spiced cupcakes.

Recipe: Cocoa Spiced Cupcakes w/ Chocolate Cool Whip Frosting & Cinnamon Butterscotch Drizzle

Spiced Cocoa Cupcakes Recipe

Cocoa Spiced Cupcake Recipe w/ #CoolWhipFrosting

Ingredients:

  • 1/2 cup of softened butter/margarine
  • 1 3/4 cup of of granulated sugar
  • 1/4 cup of brown sugar
  • 1 tsp of vanilla
  • 1 egg
  • 1 individual sized applesauce, cinnamon
  • 2 teaspoons of pumpkin pie spice *see mix below
  • 1/4 cup of unsweetened cocoa
  • 2 cups of flour
  • 1/2 tsp of baking soda
  • 1.5 tsp of baking powder
  • 1/4 tsp of salt

Directions:

  • Preheat oven to 365 degrees.
  • Cream together butter, sugars, applesauce, vanilla and egg until well blended.
  • Mix together dry ingredients (flour, salt, cocoa, baking soda and baking powder).
  • Pour the creamed ingredients into the dry mix, then mix well.
  • Pour the mix into baking cups and cook in oven for 25 minutes.

When they are cooking and cooling, cook the butterscotch topping.

Cinnamon Butterscotch Syrup Topping Recipe

Ingredients:

  • 2/3 cup of butter scotch chips
  • 1/4 cup of cinnamon baking chips
  • 1 can of sweetened condensed milk
  • 1/3 cup of butter (unsalted)

Directions :

This needs extra attention so be careful to not scorch this sauce.

on medium heat, cut in butter and condensed milk.

Carefully continue to stir until butter is melted. Slowly add in baking chips and continue to stir until well mixed. It may take around 7 minutes, remember to continuously stir to avoid scorching. The syrup will be done when it is a golden color and all of the chips are melted.

This is extremely easy to make and if you buy bulk sized cinnamon, it will save you money!

Ingredients:

  • 4 tablespoons of cinnamon
  • 1 teaspoon of ginger
  • 2 teaspoons of nutmeg
  • 1.5 teaspoons of cloves

Mix these spices together and keep in a spice jar.

Top the cupcakes with the Cool Whip Frosting and drizzle the Butterscotch syrup on top. If you let the syrup harden in the fridge, just scoop some into a bowl and warm it up to have a runny consistency again.

So how did they taste? The cupcakes actually tasted like cookies and with the Cool Whip frosting on top, it was a perfect blend of yummyness! The Cool Whip frosting really tasted creamy which I loved.
