If you have a box of Thin Mint Girl Scout cookies, you are in luck! You just need a few cookies and some items in your pantry to make these brownies in a mug in 2 minutes! These brownies in a mug are very easy to make and you can tweak it to make it more chocolatey if you wish. I actually became ill this week and I am a firm believer in calories not counting if you are sick. What does that mean? Bake up these delicious brownies when you are sick and it’s okay, in fact, enjoy two. I didn’t have any ice cream but a la mode is a perfect way to enjoy these delectable brownies.
While I haven’t tried this with other Girl Scout Cookies, I bet this recipe would work with other cookies!
This Mint Brownies in a Mug Recipe
THIN MINT MUG BROWNIES

INGREDIENTS
- 1/4 cup flour
- 1/4 cup granulated sugar
- 1 teaspoon vanilla
- 1 pinch salt
- 2 tablespoons vegetable oil (not olive oil)
- 2 tablespoons water
- 2 tablespoons cocoa (unsweetened)
- 1/4 cup crushed thin mints
- 2 tablespoons chocolate chips

In a medium bowl, mix all ingredients until well blended. | |

Pour into a microwave-safe mug. | |

Microwave for 1 – 1.5 minutes. The key here is to make sure it’s dry in the middle but not too dry. |
Are brownies in a mug really that easy? YES! You can really bake these in the microwave for only 60 seconds. Don’t have any Thin Mint cookies? That’s okay, make them without!
Do you know the “spaghetti trick”? Just stick a piece of spaghetti into your cake, bread etc and if it comes out dry, it’s done!
I doubled this recipe to make it in a larger mug and it worked like a charm!
