If you had to ask me what my top 5 favorite desserts are, I would say: Chocolate, pie, cupcakes, ice cream and churros. Yes, churros are one of my favorite treats. There was actually a churro restaurant that opened near us where we used to live that was hard to resist. Of course it’s also the treat I get every time we go to Disneyland (and sometimes maybe I’ll get more than one).
While I love churros, I have never made them from scratch. Honestly, the process scares me. So for my most recent cupcake recipe, I created a delicious churro flavored cupcake which combines two of my favorite desserts.
These are actually really easy, just modifying your favorite white cupcake recipe!
Ingredients:
- Favorite White Cupcake Mix (or box mix)
- 2 Teaspoons of cinnamon
- 1/2 Teaspoon of nutmeg
- Replace 1/4 cup of granulated sugar for 1/4 cup of brown sugar
Frosting:
- 2 cups of powdered sugar
- 1/2 stick of butter
- 2 tablespoons of milk
- 1/3 cup of brown sugar
- 1.5 teaspoons of cinnamon
- 1/4 teaspoon of nutmeg
Topping:
- Brown Sugar
Mix together your white cupcake mix, add in the brown sugar, nutmeg and cinnamon.
Once baked, allow to cool.
For the frosting, mix together all of the ingredients until creamed into a frosting. This is more of a glaze than an actual frosting. The humidity was also against me so this came out a little runny but still tasted delicious.
Top with sprinkled brown sugar.
