Cherries are one of my absolute favorite fruits and the end of Summer means the end of my favorite fruits being in season. You may be confused by the title of this recipe but stay with me because I was too. It all started when I bought Morello cherries from Trader Joe’s. I usually make a cherry pie with these but I wanted to make something snack like for the kids lunches. These cherries aren’t too tart and have a darker richer flavor. I started out with making a cookie bar but I ended up making them into a cake!
These cherry pie cake bars have oatmeal and applesauce so not only could they be enjoyed as a snack, they could be considered a breakfast cake!
CHERRY PIE CAKE BARS RECIPE

INGREDIENTS
- 1.5 cups Oatmeal
- 1 1/4 cup Flour
- 1/2 cup Butter or Margarine
- 3/4 cups Brown Sugar
- 1/2 cup Unsweetened Applesauce
- 1/2 teaspoon Baking Powder
CHERRY MIXTURE
- 1 teaspoon Vanilla
- 1 teaspoon Almond Extract
- 1/4 cup Granulated Sugar
- 1 jar Morello Cherries (from Trader Joes)
TOPPING
- 1/3 cup Brown Sugar
- 1/2 cup Oatmeal
- 1 tablespoon Butter
DIRECTIONS
Step 1 | |
Preheat the oven to 365 degrees | |
Step 2 | |
Mix together the butter, brown sugar and the oatmeal until well blended. | |
Step 3 | |
Slowly add the flour, baking powder and applesauce. | |
Step 4 | |
In a separate bowl, mix together the cherries (drained), vanilla, granulated sugar and almond extract. | |
Step 5 | |
Pour the cake mixture into an 8X8 pan until flat. Pour the cherry mixture on top. | |
Step 6 | |
In another bowl, blend together the topping: Brown sugar, butter and oatmeal. Sprinkle on top of the cake. | |
Step 7 | |
Bake in oven for approximately 55 minutes. Allow to cool then cut into bars and enjoy! |

Looks great. I have one in the oven right now, but I had to guess the amount of flour as it’s not in the ingredients list. One cup seemed about right texture wise… I guess we’ll find out soon whether I guessed right. 🙂
