Every day I pack the kids lunches. It is a little tedious (especially since they are old enough to do it themselves) but it is something I really enjoy doing for them. When I can, I like to include a homemade treat. Something sweet and maybe a little healthy.
For my most recent treat, I combined my two favorite cookies: Chocolate Chip and Oatmeal. I created the fabulous Chocolate Chip Oatmeal Cookie! I also did something that I have never done to cookies, I swapped out butter for Pompeian Olive Oil.

I was hesitant at first, would my cookies be oily? I use olive oil every day when I cook but never in baking. I can say after baking these cookies they were actually perfect!
So what is the butter to olive oil exchange ratio? Pompeian has a nice conversion chart here.
CHOCOLATE CHIP OATMEAL COOKIES WITH OLIVE OIL

INGREDIENTS
- 6 tablespoons Pompeian Olive Oil
- 1 egg
- 1/4 cup granulated sugar
- 1/2 cup brown sugar (packed)
- 1 1/2 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1 cup oatmeal
- 1 teaspoon vanilla
DIRECTIONS
Step 1 | |
Blend together eggs, oil and sugar. | |

Stir in the chocolate chips and oatmeal. | |
Step 3 | |
Slowly add the flour, baking soda, baking powder, salt and vanilla and mix on medium until well blended together. | |
Step 4 | |
Preheat oven to 350 degrees. | |
Step 5 | |
Shape these cookies into balls and bake for approximately 15 minutes or until golden brown. | |

When they come out, if they haven’t all flattened go ahead and flatten them with the spatula. This will almost give them a “crinkle cookie” look. |
