Let’s talk about back to school time. Where did the Summer go? It always seems to go quickly but I’ll be honest I love school time. The schedules really help our family stay sane because everyone knows what time to wake up, what to eat for lunch and what time to go to bed. Every year I make a new treat to celebrate the first day back at school. This year I made No Bake Chocolate Cookie Butter Cookies. They are delicious sand perfect for lunch boxes.
These cookies are easy to make and don’t require an oven! Since these are made on the stove, you could easily make these in less than 10 minutes. You could make these with peanut butter but really, isn’t life just much sweeter with cookie butter? I think so. Of course these aren’t only good for lunch boxes but perfect for after school with some milk!
COOKIE BUTTER CHOCOLATE NO BAKE COOKIES

INGREDIENTS
- 1/2 cup butter
- 2 cups granulated sugar
- 1/4 cup cocoa
- 3/4 cups cookie butter
- 2 tablespoons milk
- 3 cups oats
- 1.5 teaspoons vanilla
- 1/4 teaspoon salt
DIRECTIONS
Step 1 | |
In a saucepan, melt the sugar, milk, cocoa and butter then bring the mixture to a boil for 1 – 2 minutes. | |

Remove from the heat. | |
Step 3 | |
Mix in the cookie butter, vanilla, salt and oats until it’s well blended. | |
Step 4 | |
Spoon cookie mixture into 2-inch scoops on wax paper. Allow to cool and enjoy! |
