The first thing I have baked is a Cinnamon Pumpkin & Banana Muffin using fresh pumpkin and ripened bananas. These tasted so fresh and I tried out the new Cinnamon Chips from Hershey’s I found at Walmart.

Cinnamon Pumpkin and Banana Muffins Recipe

Serves 12-14

This Cinnamon Pumpkin and Banana Muffins Recipe is made with fresh pumpkin and banana and they can be frozen to be enjoyed throughout the season.

Ingredients

  • 2 cups Pureed Banana
  • 1.5 cups Pumpkin Puree
  • 2 Eggs
  • 1/2 cup Applesauce
  • 1.5 cups Granulated Sugar
  • 2 cups Flour
  • 1 tablespoon Pumpkin Pie Spice
  • 1 teaspoon Baking Soda
  • 1 teaspoon Vanilla
  • 1/2 cup Cinnamon Baking Chips

Directions

Step 1
Preheat oven to 375 Degrees
Step 2
Cream together eggs and sugar, mixing for approx 30 seconds
Step 3
Slowly blend in pumpkin, applesauce and banana
Step 4
Slowly stir in flour, then hand mix the remaining ingredients and stir until well blended
Step 5
Pour mixture into baking cups
Step 6
Bake for approx 20-22 minutes, please note because of the moisture in this muffin they may take a few minutes longer to bake. Check them by inserting a toothpick in the middle, if it comes out clean it's done.

I made a large batch and froze the rest, these will last in an air tight container for approx 5-7 days.

Recipe: Candy Corn M&M’s Eggless Sugar Cookie Dough Dessert

Ingredients:

  • 1 cup of flour
  • 2 cups of granulated sugar
  • 1 tsp of vanilla
  • 1/2 cup of softened butter or margerine
  • Candy Corn M&M’s
  • Orange Sprinkles

Directions:

  • In a bowl, mix together flour, sugar, butter and vanilla until well blended.
  • Line treat cups with  orange granulated sugar sprinkles.
  • Place a small ball of dough down, then layer with M&M’s on top of that, repeating once.
  • Enjoy!

If you are curious, the little dishes are from Hobby Lobby and the spoons are from Tom Kat Studio! I stamped them with a candy corn stamp.

Witch Hat Treat Boxes

This week we are passing out the Boo Buckets we made for our neighbors ( http://cleverpinkpirate.com/2012/09/26/halloween-boo-buckets/) and we are also creating little treat boxes for our Halloween party.  These were simple to make with a simple cut out from Silhouette, the 3D Witch Hats. They will be great for table decor and guests can take them home at the end of the night!

Supplies:

  • Witch Hat Cutout
  • Adhesive Tape Roller
  • Cardstock
  • Scallop Punch
  • Embellishments such as ribbon, Halloween Die Cuts etc
Simply roll the adhesive on the edges of the hat and adhere in a cone shape. Then fill with candy and adhere the base of the hat to the cone shape to create the hat. Decorate with ribbon and a round diecut punch on the front.

Pumpkin Pie Pancakes Cake w/ Pumpkin Whipped Cream via www.cleverpinkpirate.com

Have you seen Pancake Cakes? I’ve seen a few of them and they look so fun for a breakfast or a dessert but wanted to do my own with some Fall flavors so I created this Pumpkin Pie Pancakes Cake w/ Pumpkin Whipped Cream. Wooo can you say that 5 times fast?!

Ingredients:

Pancakes:

  • 2 cups pancake mix
  • 1 egg
  • 1 1/4 cup pumpkin
  • 1 teaspoon of vanilla
  • 3/4 cup of milk
  • 2 teaspoons of cinnamon
  • 1 teaspoon of nutmeg
  • 1/4 teaspoon of cloves

Frosting:

  • 2 cups of heavy whipping cream
  • 3/4 cup of pumpkin
  • 1 teaspoon of vanilla
  • 5 tablespoons of raw sugar
  • 1/4 teaspoon of nutmeg
  • 1.5 teaspoons of cinnamon
  • 1/8 teaspoon of cloves

Directions:

Pancakes:

Mix all ingredients until well blended, these will produce thicker pancakes so if you want them a little thinner, add more milk. Once the ingredients are well blended, make the same sized pancakes (approx 5-6).
**Tip, to cook pancakes, allow pan to warm up and cook the first side until you see bubbles, then flip.

Frosting:

Whip the whipping cream until light and fluffy. Then add the remainder of the ingredients, gently folding in until well mixed.
Create the cake by placing one pancake on the bottom, then adding a layer of the whipped cream. Repeat until all pancakes are gone, then top with the whipped cream. I also topped it with homemade chocolate syrup.

Spray Painted Pumpkins from the Dollar Store

I love the styrofoam pumpkins but boy are they expensive! I found some foam pumpkins at the dollar store but didn’t care for the color. So I made them over these dollar store pumpkins with spray paint and vinyl into a Pumpkin Topiary.

Supplies:

  • Dollar Store Pumpkins
  • Spray Paint (gold, silver, black)
  • Skewer
  • Sparkle Mod Podge (optional)
  • Vinyl

Directions:

Spray painted gold dollar store pumpkin w/ vinyl bats for Halloween

 

  • Spray paint two coats on each pumpkin.
  • Cut out Halloween shapes on the Silhouette and adhere to the pumpkins. I had issues with the spider and web and so I adhered them with Sparkle Mod Podge.
  • Poke the skewer in the bottom of the first pumpkin, trough the top and middle of the second pumpkin on the top of the bottom pumpkin.

 

The great thing about these pumpkins, you can turn them around and they can be displayed at Thanksgiving.
