Perfect Lemon Bar Recipe (From Scratch)

If there is one flavor I am obsessing over right now, it’s lemon. I am pretty much into everything lemon (which by the way if you haven’t seen my recent lemon round up, you should check it out: http://cleverpinkpirate.com/2014/04/01/lemon-recipe-roundup/). Lemon Bars have to be one of my all time favorite lemon treats so I whipped up a batch of my Perfect Lemon Bar Recipe for Easter! These are actually one of the first treats I started baking when I was a teenager so they are not only delish, they are a nostalgic treat!
PERFECT LEMON BARS

INGREDIENTS
Topping
- Powdered Sugar
- Lemon Zest (optional)
CRUST
- 3/4 cups Sugar
- 2 cups Flour
- 1 cup Butter (Softened (margarine is okay too))
CURD
- 3 Freshly Squeezed Lemons (approximately 3/4 – 1 cup fresh lemon juice)
- 4 Eggs (room temperature)
- 1 3/4 cup Sugar
- 1/3 cup Flour
- 1 tablespoon Milk
DIRECTIONS
Crust | |
Step 1 | |
Mix up all ingredients for the crust. | |
Step 2 | |
Pat the dough into a 9 X13 inch pan until it is completely flat. | |
Step 3 | |
Bake at 350 degrees for 20 minutes. | |
Curd | |
Step 4 | |
While crust is baking, mix the sugar, milk, eggs and lemon juice with an electric mixer for approximately 5 minutes on a low – medium speed. | |
Step 5 | |
Add in flour and vanilla and mix until well blended. | |
Step 6 | |
Remove the hot crust, then pour the curd filling over the top of it. Bake at 350 degrees for 20 minutes. | |
Step 7 | |
Remove, top with powdered sugar and enjoy! |
