This week has been a crazy one. I have been planning a very special Pinterest Party at my house, which I held last night. An event where some of my favorite crafty friends came over to work on some awesome Pinterest projects. With me hosting this event, I ran around like crazy trying to plan, clean, shop and decorate. Since I had been so busy, I had to make a few quick meals for the family before the event. I went to Sam’s Club to find a few items for my party and to find items to make some easy meals.
The best thing about going to Sam’s Club on a Wednesday evening is the lack of crowds and I was able to go without the kids so I was able to browse everything without anyone in tow. I bought some fabulous dips and a salsa not only for my party but to help make some quick and easy dinners. I also bought chicken breasts and yes a bottle of Choco Vine. Also, a little something for myself I will show you in a little bit.
On Thursday night I made a delicious Mango Salsa Chicken for the family. I wish I could say I slaved over this delicious dish but who am I kidding, had cleaned all day for the party and went shopping and took the youngest to swimming lessons, I needed quick and easy and this was exactly that! It was a simple two ingredient dish!
Mango Salsa Chicken
1 minute prep
65 minutes cooking
Ingredients:
- Chicken Breasts
- Mango Salsa (found at Sam’s Club)
Directions:
It was pretty simple and involved about 60 seconds of prep time. Preheat the oven to 390 degrees, then line a 9X9 inch pan with tin foil. Place chicken breasts on the foil then pour approx 1.5 cups of mango salsa on the chicken. Cook for approx 65 minutes, enjoy! One of the best things about shopping at Sam’s is obviously the ability to buy in bulk at a low price and bulk means planning multiple meals from one item. I took that Mango Salsa and served it at our Pinterest Party.
The next night was the party which meant I was running around trying to make everything look great. I needed to serve the hungry kids before the party (as they were salivating as I was setting up) so I made something not only the kids could have for dinner but something I could also serve to the guests! It was great because I was able to use more of those huge chicken breasts I got at Sam’s Club.
Chicken, Spinach and Artichoke Stuffed Shells
6 minutes prep
10 minutes stove cooking
15 minutes oven cooking
Ingredients:
- Jumbo Shells
- 2 Chicken Breasts
- Artisan Spinach Artichoke Dip
- 1 tablespoon of olive oil
- 1 tablespoon of poultry seasoning
Directions:
- Preheat oven to 300 degrees.
- Cook jumbo shells in large pot of water, drain.
- Chop up chicken into cubes, then place in a pan with oil and seasoning. Cook until chicken is cooked all the way through.
- Take drained shells and stuff each one with approx 1 tablespoon of spinach artichoke dip and a couple pieces of chicken.
- Placed prepared shells in a foil lined casserole dish, cooking for 15 minutes.
Cool and serve!
These were very simple to make, and very tasty! The kids at them for dinner and I had a good portion to serve to my guests as well, win win!
As you can see from my cart, I bought a cute appetizer serving set at Sam’s Club. It was only $25 for this beautiful 18 piece glass set! I served not only the shells in them but I served the dips I bought at Sam’s in them as well.

The Spinach and Artichoke dip is gone because it was unbelievably good but I still have the Mango Salsa and Red Pepper Hummus, I see some more easy meals in our future this week!
