Do you love coffee as much as I do? Like, if you went one day without it your kids would go and hide? That may seem more like an obsession but I am definitely a lover of coffee. I’m happy to be doing this post to share with you not only one of my favorite coffee recipes but also introduce you to the Red Cup Showdown with Jeff Mauro and Seattle’s Best Coffee! Did you know you can enter your favorite coffee recipe in the Red Cup Showdown for a chance to win $10,000? It’s true! I am sharing details on that below but first, I wanted to share one of my favorite coffee concoctions.
This weekend we went camping and while I totally loved it, it totally wiped me out. We went hiking, exploring, played games and just had fun unplugging from the world. It’s the planning and packing up from camping that is completely draining. That means it’s a coffee in the morning and another coffee in the late morning kind of day.
I recently picked up a bag of Seattle’s Best Coffee (I prefer whole bean) at Walmart. I bought Level 3 for the first time. I felt it was a good balance of coffee for me because light blends are just not enough coffee for me and dark roasts are a little much. Also, the price was great. I was going to look for coupons to add to my savings but completely forgot!
I also bought these Caramel Swirl marshmallows, yum!
Unfortunately, they didn’t make it into my coffee as we used them all up camping 😉
My normal Monday morning coffee, large cup with just some half and half and vanilla added in. I enjoy a hot coffee in the morning but for that second wind, I like to change it up with a blended iced coffee. I also like my coffee to have some flavor so I am sharing my Peppermint Vanilla Mocha Blended Iced Coffee.
Peppermint Vanilla Mocha Blended Iced Coffee
Ingredients:
- 1 cup of Seattle’s Best coffee
- 1.5 – 2 cups of ice
- 1/2 cup of skim milk
- 1/2 tsp of Peppermint Extract
- 1 tsp of Vanilla
- 2 tablespoons of chocolate syrup
- dash of cinnamon
- Whipped cream to top it off!
Directions:
Combine all ingredients in blender, enjoy! One of the best parts of this recipe is you can use coffee brewed from earlier that you didn’t use. It’s a great way to make sure you enjoy every last drop of coffee from your pot 😉
