Ingredients
Cookie
- 1 cup Butter/Margarine (Softened )
- 2 Eggs (Beaten lightly)
- 1.25 cups Granulated Sugar
- 1 cup Brown Sugar
- 3 2/3 cups Flour
- 1/4 cup Lemon Juice (Fresh)
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla
Lemon Glaze
- 3 cups Powdered Sugar
- 4 tablespoons Lemon Juice
- 1 teaspoon Water
Directions

| Cream together eggs, butter and lemon juice | |

| Slowly stir in flour and baking powder | |

| Stir in vanilla | |
| Step 4 | |
| Once the dough is well mixed, use a parchment paper and wrap the dough into a log, covering the dough. Then place in freezer for one hour. | |

| Preheat oven to 360 (after cookie dough has hardened) | |

| Remove the parchment and slice cookies into 1/4 inch rounds. | |

| Place on cookie sheet and bake for approx 10 minutes or until edges brown. | |

| While the dough is in the oven you can mix up the glaze which is the 4 tablespoons of lemon juice, powdered sugar and 1 tsp of water. If you still need more o fa runny consistency, slowly add more lemon juice until the sugar is dissolved. | |

| Once the cookies are cool, glaze and allow at least 1 hour to harden. | |
