Pizzelle Cookie Recipe
I really shouldn’t because I am trying to eat a little better, but I did. I baked up a new cookie with a fancy schmancy Pizzelle Press. I’ve had Pizzelle cookies but probably only a few times in my life. Now of course the downside to these cookies is that you definitely need a press to create them. However, they are not rare to find.
Recently I found this Cuisinart Pizzelle Press at a thrift store, woot! If you are in the market for one, you should definitely invest in this one. It’s less than $50 on Amazon.com
Like I do with all recipes, I scoured the internet and tried to find how I could come up with my own recipe. I found that typically, Pizzelle cookies are made with Anise. I decided to just use my homemade vanilla in the recipe instead.
Recipe:
1 3/4 cup of all purpose flour
2 tsp of baking powder
3/4 cup of granulated sugar
1/2 cup of melted butter
3 large eggs
1 tsp of Vanilla (you can substitute for anise, rum extract etc)
Cooking Oil/Spray
Directions:
Blend together sugar and butter
Add vanilla
Sift together flour and baking powder, stir in.
Heat Pizzelle Press and coat inside press with cooking oil.
Scoop approx 1 tablespoon in each press, then close and cook according to directions. I cooked mine on a “3” for approx 45 seconds. The Cuisinart comes with a light system to let you know when they are done. You can also tell when they are done as the steam stops coming out of the rpess.
Remove them from the tray.
They will more than likely be soft, simply allow them to dry to harden.
Eat as is or sprinkle with powdered sugar.
