I’m in full holiday baking mode, from fudge to cookies, nothing is off limits! I recently tried a new product called C&H Light Sugar and Stevia Blend and before gifting anything I always try it out for myself (of course). I use Stevia at home and honestly created my own blend before with regular granulated sugar so this is kinda nice to have!
I came up with these easy Peppermint Sugar Cookies using this new sugar. At first I thought that I was going to struggle with coming up with a balanced recipe but I quickly found on the back of the bag that 1/2 cup of C&H Light replaces 1 cup of sugar! I researched high and low for different cookie recipes and then came up with one that we be perfect for what I wanted to do.
First thing I did was create Peppermint Sugar. This is extremely easy, I took 3/4 cup of the C&H Light and added 1 teaspoon of Peppermint Extract and stirred until it was well blended. This is great not only for baking but you can make Peppermint Sugar to keep in a jar for your coffee or even add it to milk!
PEPPERMINT M&M SUGAR COOKIES W/ C&H LIGHT SUGAR

INGREDIENTS
- 3/4 cups C&H Light Sugar
- 1/2 cup Butter (Softened)
- 1/2 cup Margarine (Softened )
- 1 teaspoon Vanilla
- 2 Eggs
- 2 & 2/3 cups Flour
- 1/2 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1 cup Peppermint M&M’s
DIRECTIONS
Step 1 | |
Preheat oven to 375 Degrees. Cream together sugar, vanilla, eggs, butter and margarine until well whipped together. | |
Step 2 | |
Slowly add dry ingredients until well blended. | |
Step 3 | |
Scoop into 1-2 inch balls, press M&M’s in the middle. | |
Step 4 | |
Bake approx 10 minutes or until edges are golden brown. |
I will say these baked really well, they came out soft and fluffy and I would definitely use the C&H Light Sugar again. My only note is if you aren’t used to the Stevia taste, it may have an aftertaste you are not used to.
