I decided to use a few of my pumpkins from our “pumpkin stash” to make some fresh puree. This is actually the first time I have ever made a pumpkin puree out of fresh pumpkin. After researching I chose to bake the pumpkin in the oven (cored and sliced) to make it easier to peel, then I placed them in a food processer. I used some of the pumpkin to make a Pumpkin Soup in the crockpot for dinner tonight. The rest I have frozen to use this month in my baking recipes.
While I was cooking, I had Pandora on the Beatles Station via my laptop. This truly made my busy solitude in the kitchen much more enjoyable. I did a great amount of peeling and I honestly found it therapuetic. It felt great to make something completely from scratch and for a special holiday dinner with the kids.
I ended up taking a break during the baking to enjoy a pedicure with my best friend. It was nice to relax and catch up with her. Not to mention getting pampered after a long week was nice as well.
After my day of cooking, it was time to go to the kids school for the Halloween Carnival. I love to see them so excited and just have fun. It is definately one of the best things about being a mom ~ my kids happiness. Tonight after the carnival, Brian (my significant other) had his children over and we did a special dinner for Halloween. Before dinner they got to decorate cookies I had baked earlier. I wasn’t stressed about messes but happy because they were having fun and being creative.
For dinner, we did a creative Halloween Theme
A special drink of Orange Fanta with Ice Cream and Skeleton Ice Cubes
Pumpkin Soup with Skeleton Biscuits
Spagetti (we called them the guts)
Spagetti Sauce was the blood
Baked Red Potatoes were the hearts
Broccoli was the brains
Asparagus was the fingers
I will say, i don’t give my kids soda so the drink was a special occassion. I believe everything in moderation and it was a fun experience for them so I didn’t stress about them having too much sugar.
We of course finished the evening with a little shopping at Payless with the 50% coupon.
At the end of the day, it is nice to reflect and realize how blessed I am. It’s the simple things like baking from scratch, listening to the radio, seeing my kids smile and having a great family dinner where everyone is happy. I know that stress is going to try to overcome me at times but I know that I have so much to keep me going. It’s also nice that on days like this, I am not worried about what coupons are out there or where the best deal is but about enjoying what I already have been blessed with.
