
I’m always looking for snacks that are healthy and easy to make for me and the kids. Since I don’t buy a lot of processed snacks like chips and crackers, homemade healthy snacks are a must around here.
After I made these granola bars, the family ate them up quick! Unfortunately since the Clever Teen recently got braces, snacks have gone a little softer around here. I took that recipe, added a few things and came up with these No Bake Peanut Butter Chocolate Chip Energy Bites. These are perfect for her to eat and take on the go for when she has Basketball or Volleyball after school. The bonus to these delicious energy bites is they mix quickly and you do not have to bake them!
PEANUT BUTTER CHOCOLATE CHIP ENERGY BITES
- 1/4 cup Flax Seed (Powder)
- 1/3 cup Peanut Butter (Smooth)
- 3 tablespoons Honey
- 1 cup Oatmeal
- 1 tablespoon Chia Seeds
- 3 tablespoons Brown Sugar
- 1/4 cup Coconut (grated)
- 1 teaspoon Vanilla
- 3/4 cups Chocolate Chips

Mix everything in a bowl except the chocolate chips until well blended. Fold in chocolate chips. | |

Shape the dough into 1 – 2 inch ball shapes, cover and store until ready to eat. |
