The kids are officially back to school and that means our family can finally get back to our “regularly scheduled programing”. I’ve always wanted to do freezer cooking or “once a month cooking” to make my life just a little easier and I finally did my first meal. I actually made this lasagna right before going to Blogher so my mom would be spared at least one meal to cook.
OAMC or Once a month cooking is a great way to save time and money by dedicating one day a month to cooking meals for the month. It saves money so you won’t be tempted to eat out when you have had a long day, and all moms have those days!
I don’t post too many recipes so you may not know this, I love cooking, it is one of my great passions. When I cook, I usually create my own recipes that are healthy, kid approved and easy to make. I like to use ingredients that are simple but taste delicious. One of my favorite products to use when cooking with any meat is the Morton’s Season All Salt. It’s a versatile product that can be used with anything from roasts or as specified in this recipe, ground beef.
For this recipe I used:
Morton’s Season All Seasoned Salt (I usually do not measure, more just sprinkle to taste)
1 small tub of Ricotta cheese
1 box of “no boil” lasagna noodles
1 lb ground beef
1 jar of spaghetti sauce
2 small 8 ounce cans of tomato sauce
1 8 ounce bag of mozzarella shredded cheese (you may want 1 pound if you like your lasagna extra cheesy)
Spread ricotta cheese on the layer of noodles
Spread a layer of meat over the noodles and cheese
Mix the spaghetti sauce with the tomato sauce and pour over the layer
Repeat the steps above until it reaches the top
Top with mozzarella

It only took me 15 minutes to make this. You can freeze it right then to use at a later time or stick it in the oven at 375 degrees for 1 hour.
