3/4 c shortening
1 c plus 2 T white sugar
1 1/2 tsp vanilla
3 c flour
1 1/2 tsp baking soda
1 1/2 tsp baking powder
3/4 tsp salt
1 1/2 c sour cream
6 T butter
1 c packed brown sugar
2 tsp cinnamon
Preheat oven to 350. Grease a bunt pan or 9×5 loaf pan.
Cream together the shortening and sugar. Add vanilla, and then add eggs one at a time, beating well with each addition.
Combine dry ingredients. Alternate adding dry ingredients and sour cream to the sugar/egg mixture.
In a small bowl, combine all filling ingredients and mix well with hands or fork.
Pour half of batter into prepared pan. Add filling, then top with remaining batter.
Bake for 50-60 minutes, until a toothpick comes out clean.
