Chocolate Chip Oatmeal Cookies with Olive Oil

These Chocolate Chip Oatmeal cookies are great for anytime and by using olive oil, you save on having added saturated fat and cholesterol!
Ingredients
- 6 tablespoons Pompeian Olive Oil
- 1 egg
- 1/4 cup granualted sugar
- 1/2 cup brown sugar (packed)
- 1 1/2 cup flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup chocolate chips
- 1 cup oatmeal
- 1 teaspoon vanilla
Directions

| Blend together eggs, oil and sugar. | |

| Stir in the chocolate chips and oatmeal. | |

| Slowly add the flour, baking soda, baking powder, salt and vanilla and mix on medium until well blended together. | |

| Preheat oven to 350 degrees. | |

| Shape these cookies into balls and bake for approximately 15 minutes or until golden brown. | |

| When they come out, if they haven't all flattened go ahead and flatten them with the spatula. This will almost give them a "crinkle cookie" look. | |
