The warm weather is upon us. Unless you live in Phoenix then it is already well on it’s way. Of course, you know what that means. Shorts, tanks and swimsuit time. Not my favorite time of the year and not just because soon it will feel like my sweat will come off but I LOATHE things like bathing suit shopping. I think I’d rather get a root canal. But I digress, it’s only because I may have put on a few pounds during the Winter time.
On April 1st, I started a new journey of eating right (and no, that’s not an April Fools joke). I’m committing to not drinking any root beer or any soda really it’s just that root beer happens to be my all time favorite. I’m also doing my best to eat well and exercise. When shopping and making my meal plans, I can tell you that salads are not my favorite. I mean, I’m not a rabbit so why would green leafs be exciting? Well, while they may not be exciting their caloric content takes the win for being awesome at a time of needing to eat healthy. So instead of fighting the non excitement for salad, I decided I’d dress up some of my salads and of course I’d share maybe one or two of them with you!
When we were shopping for the healthy eats recently, we stumbled upon the 100% juice section and I picked up the mango juice. I was obviously excited not only for the flavor but this juice does not have pineapple juice in it. Very important as I am allergic to pineapples. I thought I could not only drink it, but I could probably make a delicious salad dressing out of it too!
This week I made a Summer Salad, a salad with summer flavors infused in every bite.
Summer Salad with Mango Dressing
- Salad mix
- Cuties (Clementine oranges)
- Sliced cucumbers
- Sliced strawberries
- Dried cranberries
- Slivered almonds
Topped with Mango salad dressing (recipe below)
MANGO SALAD DRESSING

INGREDIENTS
- 1/2 cup Mango Juice
- 1/4 cup Greek Yogurt (I love Fage)
- 1 teaspoon Honey

Not all greek yogurts are created equal. I like to use a plain no fat or low fat yogurt like Fage. It makes a great base in smoothies, dressings etc.
