Have a love for everything lemon? My latest obsession with lemon has had me create this delicious Lemon Pound Cake Recipe. It is perfect to serve after dinner on a warm Summer night or at a backyard cook out on Memorial Day.
The great thing about this season is the availability of fresh lemons. Though they can get a little pricey at the store, I’ve been buying them in bulk to save a little $.

Lemon Poundcake Recipe
|Prep time||10 minutes|
|Cook time||1 hours, 10 minutes|
|Total time||1 hours, 20 minutes|
- 1/4 cup butter (room temp)
- 2 eggs (room temp)
- 1/3 cup sour cream
- 1 cup sugar
- 1 teaspoon vanilla
- 1/4 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 cup lemon juice ((fresh squeezed works best))
- 2 cups flour
This is a very dense cake, the longer you can let it cook, the better!
|Mix together eggs, sugar and butter until well creamed|
|Mix in lemon juice|
|Slowly stir in baking powder, baking soda and flour|
|Mix in the sour cream and vanilla until well blended|
|Bake for approximately 65 - 75 minutes at 350 degrees|
Lemon Pound Cake Glaze: 1/2 cup of lemon juice, 2 cups of powdered sugar. Mix well until fully blended, then add 1/4 tsp of vanilla. If the glaze is too thick, add a little more lemon juice. If it is too thin, add a little bit of powdered sugar.
Serve with strawberries and/or whip cream for the perfect blend of lemon goodness.
