Summer time is here (at least it is in Phoenix) and one of my favorite flavors of the hotter months is lemon. I wanted to do something little different so I baked up some Lemon Ice Box cookies. It’s been a while since I have had ice box cookies but what is great about them is you can create the dough and freeze it to use later. This particular cookie has a tea biscuit texture with a lemon glaze.
LEMON ICE BOX COOKIE RECIPE

INGREDIENTS
COOKIE
- 1 cup Butter/Margarine (Softened )
- 2 Eggs (Beaten lightly)
- 1.25 cups Granulated Sugar
- 1 cup Brown Sugar
- 3 2/3 cups Flour
- 1/4 cup Lemon Juice (Fresh)
- 1 teaspoon Baking Powder
- 1 teaspoon Vanilla
LEMON GLAZE
- 3 cups Powdered Sugar
- 4 tablespoons Lemon Juice
- 1 teaspoon Water
DIRECTIONS
Step 1 | |
Cream together eggs, butter and lemon juice | |

Slowly stir in flour and baking powder | |
Step 3 | |
Stir in vanilla | |
Step 4 | |
Once the dough is well mixed, use a parchment paper and wrap the dough into a log, covering the dough. Then place in freezer for one hour. | |

Preheat oven to 360 (after cookie dough has hardened) | |
Step 6 | |
Remove the parchment and slice cookies into 1/4 inch rounds. | |
Step 7 | |
Place on cookie sheet and bake for approx 10 minutes or until edges brown. | |

While the dough is in the oven you can mix up the glaze which is the 4 tablespoons of lemon juice, powdered sugar and 1 tsp of water. If you still need more o fa runny consistency, slowly add more lemon juice until the sugar is dissolved. | |

Once the cookies are cool, glaze and allow at least 1 hour to harden. |
