One of my goals this year is to try more new recipes. I love cooking but I find myself making the same recipes over and over for my family. I do enjoy reading my cookbooks for new recipes but honestly, I like to create recipes all on my own. I started cooking at about the age of 12 and just found I love putting new flavors together that were functional for family dinners.

Easy Banana Smoothie Recipe via @CleverPirate

 

The other day I started making things with ripe bananas and as I whipped up the bananas, I thought it would make a delicious smoothie. And it did! What is great about this recipe is it eminds me of Orange Julius and it’s only 3 ingredients. I’ve seen powdered banana smoothie mixes but there is no need for that here!

Easy Banana Smoothie Recipe

Serves: 1-2

Ingredients:

  • 2 Ripe bananas
  • 2 cups of milk
  • 1 cup of ice

Directions:

Blend up ripe bananas either in a mixing boowl or blender. Add the ice, milk and bananas to blender and whip for about 1 minute.

Enjoy!

 

I imagine I am not the only one who gets a little manic around the holidays. Sometimes I need a reminder to just slow down and take it easy! I do have an index of easy peasy recipes I use on crazy days. One of them is this Easy Chicken Enchilada Skillet Recipe with only 4 ingredients! I love enchiladas but sometimes the rolling does me in time wise, this is an easy way to get around it and it’s only 4 ingredients!

 

Chicken Enchilada Skillet Recipe

Serves 4-6
Prep time 20 minutes
Cook time 15 minutes
Total time 35 minutes

This easy Chicken Enchilada Skillet is perfect for a busy night, it takes less than 35 minutes to create and tastes delicious!

Ingredients

  • 12 Corn or flour Tortillas (Small)
  • 1 can Enchilada Sauce (28 Ounce Can (You may want yours a little saucier or a little less saucier))
  • 2 cups Cooked Chicken (Shredded)
  • 2.5 cups Shredded Cheese

Directions

Step 1
Have all of your ingredients divided out before starting.
Step 2
Layer a skillet pan starting with approx 1/2 cup sauce, then 2-3 tortillas, topped with a 1/2 cup cheese and `/2 cup of chicken.
Step 3
Continue layering your skillet with all of the ingredients being sure to top with the remaining cheese and sauce.
Step 4
Cover and cook on the stove top on med-high heat for approx 12-15 minutes (until the tortillas are cooked and the cheese is melted).

That is it! I would say the process that will take the longest is just cooking the chicken! You could always omit the chicken and or add different herbs and spices.


I’ve been sick for almost a week now. I feel awful as I’ve left the family to fend for themselves at dinner time. I just didn’t have the energy to do anything other than frozen pizza or macaroni and cheese. But, this weekend I got to feeling a little better and found myself wanting some comfort food as a result of this cold. Of course, being sick means a lack of energy so I needed to make something easy. I remembered my kids loved when I made them this chicken pot pie a few weeks ago. I was completely surprised because if I give them anything other than broccoli as a vegetable, it’s complain, complain complain. this time I made an even bigger batch, hoping to have left overs but to my surprise again, they all had seconds!

 We shopped at Smart & Final for a few of our Dinner ingredients (and a head start on our Halloween candy stash) .

I’m happy to say that their Foster Farms Chicken will be on sale for $.99 lb starting 9/26-10/2

Recipe: Easy Chicken Pot Pie

Time: 15 minutes prep, 15 minutes cook

Feeds approx 4-6 people

Ingredients:

  • 3 Cups of Cut/Cubed Foster Farms Chicken Breasts
  • Onion and Garlic Seasonings
  • 1 Can of Carrots
  • 1 Can of Corn
  • 1 Can of Peas
  • 1 Can of Cream of Chicken Soup
  • 1.5 cups of Bisquit Mix or Refrigerated Biscuits
  • 1 egg
  • 1/2 cup of milk (for biscuit mix)
  • 1/2 cup of milk for chicken and vegetable mix

Directions:

Preheat the oven to 400 Degrees

Cook the chicken with the seasonings thoroughly.

Combine the cooked chicken with the soup, 1/2 cup of milk and vegetables in a large mixing bowl.

Pour the vegetable/chicken mixture in a large pie dish.

Mix the biscuit mix with the egg and milk.

Pour the biscuit mixture on top of the vegetables. If you are using refrigerated biscuits, just place them on top. To prevent spillage on the bottom, place on a foil covered cookie sheet.

Cook for approx 15-17 minutes, until the crust is a golden brown.

Cool and serve.

**You do not need to poke holes in the top for ventilation.

I have this fond memory of being a child and my mom making Crepes on Sundays. She would fill them with jelly and top them with powdered sugar and they were so good! I haven’t made Crepes in a while but I made these Nutella Banana Crepes for Brinner (which is breakfast for dinner) last night and really, it was like having dinner and dessert all in one! It definitely satisfied my chocolate cravings!

You don’t need a special talent or pan to make crepes, I did this in a flat Wok pan it was simple!

 

Recipe: Nutella Banana Crepes

Time: 15 minutes

Crepes Ingredients:

  • 1 cup of flour
  • 2 eggs
  • 1.5 cups of milk
  • 1 tablespoon of raw or granulated sugar
  • 1 tablespoon of oil

Filling and Topping Ingredients:

  • Nutella
  • 2-3 bananas
  • Powdered sugar

Directions:

  • Mix together milk, oil and eggs until well blended.
  • Blend in sugar.
  • Slowly mix in flour until well blended.
  • Slowly pour approx 1/4 cup into a heated skillet or griddle. Crepes are meant to be thin, be sure to not oversize it so it is still easy to flip.
  • Cook on each side for approx 30 seconds.
  • Fill each crepe with Nutella by spreading it on half of the crepe, then add sliced bananas and fold over.
  • Heat a few tablespoons of Nutella in the microwave on approx 35 seconds so it is easy to garnish on the top.
  • Take a spoon and fill with heated Nutella, spreading in lines across the top of the crepe.
  • Finish with sprinkled powdered sugar, enjoy!
