One of my goals this year is to try more new recipes. I love cooking but I find myself making the same recipes over and over for my family. I do enjoy reading my cookbooks for new recipes but honestly, I like to create recipes all on my own. I started cooking at about the age of 12 and just found I love putting new flavors together that were functional for family dinners.
I had an idea to do an easy pot pie recipe but was worried on how it turned out. First, I was going to use fish. We don’t actually eat a lot of fish but fish is something that I wanted to incorporate more into our dinners. Then, I was going to cheat a recipe (something I love to do) by using premade biscuits and last I was going to sneak in some veggies.
I went shopping for fish at Walmart and found the Van De Kamps Fish Tenders and thought they would be great for our family. Mom doesn’t have to do much besides putting them in the oven and since they are battered, I think the kids will like these a little bit better than just serving them fish.
I almost went with the Fish Taco recipe on the box. It looks delicious and we do like tacos. But, I had already told the kids we’ll be having pot pies so I continued with that recipe. I was worried about my idea, would the fish and vegetable mixture stay inside the biscuits? Would the kids like it?
Luckily I had found a large bag of Birds Eye Broccoli at Walmart (for under $6 bucks it was a fab deal) but I always worry if they will eat other vegetables when I sneak them in.
I was happy when the recipe turned out and the kids ate it! They even had seconds! I served these with broccoli because my kids only like broccoli when it comes to vegetables. Strange? Maybe but heck if they are going to eat something green I am happy with that.
Of course little did they know mom was being sneaking and making them eat other veggies via the pot pie! (ha Clever tween ate green beans without knowing it. Shhhhh don’t tell her.)

These fish pot pies have only 4 ingredients! Making mom’s lives easier! I found that these could also be frozen to eat at a later time. Just pop them into the microwave for a few minutes then bam, dinner!

- 5 pieces Van De Kamps FIsh Tenders (Cooked and chopped)
- 1 can Cream of Chicken Soup (10 3/4 ounce)
- 1 packet Bird's Eye Steamfresh Mixed Vegetables (12 ounce package)
- 1 can Refridgerated Biscuits (flaky) (I prefer flaky biscuits as they come apart easier))
