For at least one meal every week, the kids help me cook and prepare a dinner. It’s usually my 10 year old daughter who is helping me in the kitchen. She loves to use her cookbook that is just for kids, make her list and go to the grocery store with me to purchase everything needed. Unfortunately, we took her to the doctor today where we found out she has strep throat and bronchitis! Her brother wanted to make her feel better by helping make her a special dinner. We were excited to put together a dinner just the two of us. At least one meal a week in our house is “Brinner”. This is breakfast for dinner and I knew this would be really easy and fun for Tyler.
We went shopping for our ingredients at Fry’s. I’m so excited as Fry’s just brought back their amazing coupon program. They will accept any local competitor coupon. They will also redeem any coupons below $1 at $1 face value. That’s not even the best part, they are running their Mega Event where you can buy 10 and save $5. Combine these deals with the coupons that are currently available and I am in heaven! When I did my big Mega Event shopping trip earlier, I spent $27. The total before coupons was close to $190! I could go on and on about how Fry’s helps me stretch my grocery budget but that will come later.
After we got home with our ingredients, we were ready to cook! This dinner was really easy for Tyler to help with because there was not a lot to it. First, we heated up the pan and sprayed Pam on it. We then took the Egg Beaters and poured them in the pan where we let them cook for a little bit, then added some Rotel. After we flipped our omelet and it turned out to be pretty dark, we thought of what we could turn it into.
We decided to make Turkey Sausage Tacos. We cut up the omelet and put it in a tortilla shell. We then topped it with the sausage and cheese. This was pretty delicious! We also made scrambled Egg Beaters with toast and turkey sausage.
Overall this dinner only took about 15 minutes to make and it cost under $10!
